4 large eggs
4 tablespoons unsalted butter
slightly melted

1 teaspoon anis oil extract
1 teaspoon of vanilla extract
Dry Ingredients
2 tablespoons shredded, sweetened coconut
3 cups of pound rice flour
1 cup of granulated sugar
1 cup of brown sugar
Hint of cinnamon
1/4 teaspoon fine salt
INSTRUCTIONS
- Mix all dry ingredients in separate bowl.
- In larger bowl mix eggs, three tablespoons of melted butter, anis oil
- extract and vanilla extract.
- Add all dry ingredients and blend.
- Pre-heat the oven to 350°F.
- Use about one tablespoon of butter to grease cookie-sheet.
- Place batter in cookie-sheet.
- Bake for 30 minutes.
- Cool for 1 hour and serve.
