Mazapan

Ingredients: 

4 large eggs
4 tablespoons unsalted butter
slightly melted
1 teaspoon anis oil extract
1 teaspoon of vanilla extract

Dry Ingredients

2 tablespoons shredded, sweetened coconut
3 cups of pound rice flour
1 cup of granulated sugar
1 cup of brown sugar
Hint of cinnamon
1/4 teaspoon fine salt

 INSTRUCTIONS


  1. Mix all dry ingredients in separate bowl.

  2. In larger bowl mix eggs, three tablespoons of melted butter, anis oil

  3. extract and vanilla extract.

  4. Add all dry ingredients and blend.

  5. Pre-heat the oven to 350°F.

  6. Use about one tablespoon of butter to grease cookie-sheet.

  7. Place batter in cookie-sheet.

  8. Bake for 30 minutes.

  9. Cool for 1 hour and serve.

Banana Bread


Ingredients :  
  
6 ripe bananas  
4 eggs  
2 cups of tapioca flour  
2 cups of white rice flour  
a dash of salt cinnamon  
1/2 cup of sugar (optional)
  1. In a large bowl , mash bananas .
  2. Add previously beaten eggs and mix .
  3. In another bowl mix all dry ingredients , and add to large bowl.
  4. Mix profusely until mix becomes .
  5. Preheat oven at 375 F (175 C).
  6. Place in pan and bake for 45 minutes.

Seudo-Flan de Coco


Ingredients:

 4 eggs (separated)
1 cup of sugar
2 cups of sweet coconut flakes
1 teaspoon of vanilla
½ teaspoon of cinnamon
1 1/2 Cup of Coconut Unsweetened Milk 
1 cup of tapioca flour
1 cup unsweetened pineapple juice

Instructuctions:





Beat egg-whites

Add :




Sugar




Vanilla & Cinnamon





coconut flakes




previously beaten egg-yolks





Coconut milk


  • Place in pan using the Baño de María method.
  • Bake for 40 minutes (350F).
  • Once baked, cool, and refrigerate for at least three hours.
  • Add the pineapple juice and sprinkle cinnamon if desired.

Tip: The Baño de Maria can be done on the stove or the oven.
